one-and-a-half chocolate chunk coconut cookies

I made some not-quite-double chocolate coconut cookies, hence the one and a half. They are, however, as delicious as double chocolate cookies, in my opinion, the flavors are just a bit different (more subtle, if you ask me).


Cocoa chocolate chunk coconut cookies (makes 24)

dry ingredients:

1 cup + 2 tbsp white whole wheat flour

3 tbsp cocoa powder

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

wet ingredients:

1 tbsp flaxmeal + 3 tbsp water (or any other replacement for 1 egg)

1/3 cup oil (flax, canola, etc…)

3/4 cup sucanat/sugar

2 tbsp soymilk

1 1/2 tsp vanilla extract

1 bar extra dark chocolate (70% plus), finely chopped

1/2 cup unsweetened shredded coconut

(1) Preheat oven to 350 degrees. (2) Mix together dry ingredients. (3) In a separate bowl, mix together wet ingredients. (4) add dry ingredients to wet ingredients and mix well. (5) Stir in chocolate chunks and coconut. *this next step is optional* (6) *refrigerate dough for an hour or so. (7) Drop dough onto a parchment lined cookie sheet and bake for 10-12 minutes. Let them cool on the pan for a couple minutes before transferring to a wire rack.

(they’re extra delicious warm because the chocolate is all melty on the inside)
