muffins, part 3
More breakfast muffins…and more apples, of course.
Also, if you do not enjoy apples and peanut butter together, you are insane and also missed out thoroughly as a small child. Seeing as I eat apples with peanut butter, oh, every day of my life, I decided they would be a good addition to the muffin saga.
Peanut Butter Apple Muffins (makes 6 muffins)
1/2 cup peanut butter (crunchy or creamy)
1/2 cup soymilk
2 tbsp apple sauce
1 tsp vanilla
1 cup whole wheat pastry flour
1/2 cup rolled oats
1 tsp baking powder
1/4 tsp baking soda
1/2 cup sucanat
3/4 cup peeled, chopped apple (that is not a dry ingredient)
(1) Preheat the oven to 375 degrees F and prepare a muffin tin. (2) In a large bowl, combine all the dry ingredients. (3) In a separate bowl, combine all the wet ingredients. You might have to use a hand mixer to get the peanut butter all mixed in. (4) Add wet ingredients to dry ingredients and mix until combined. (5) Stir in apple chunks. (6) Pour into prepared pan and bake for about 20-22 minutes, until a toothpick comes out clean.
(This may be the one thing that I won’t suggest spreading peanut butter on…but I might do it, I just might…)
