Cinnamon Raisin Oatmeal Muffins (makes 5-6)

1/2 cup rye flour

1/2 cup whole wheat pastry flour

1/2 cup rolled oats

1/2 cup raw sugar

1 1/2 Tbsp ground flaxseed

1 1/2 tsp cinnamon

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup maple syrup

1/4 cup canola oil

1/3 cup soymilk

1/3 cup peanut butter, softened

1/2 cup raisins

(1) Preheat oven to 350 degrees F and line a muffin tin. (2) In a large bowl, stir together flour, oats, sugar, flaxseed, cinnamon, baking powder, baking soda and salt. (2) In a separate bowl, beat together maple syrup, oil, soymilk and peanutbutter. (3) Pour wet ingredients into flour mixture and stir with a spatula until just combined. Stir in raisins. (4) Pour batter evenly into muffin tins. Bake ~20 minutes, until a toothpick inserted in the center comes out clean.

It’s just like having oatmeal for breakfast, but on the go!
