better late than never

apologies to people who actually look at this blog, for my long absence. I was away in the freezing cold looking at animals for a while, so not much cooking has been done. However, here is a recipe from a little while ago, appropriately animal themed…

Chocolate Ginger Whales (~3 dozen) *Gluten Free

1 1/2 cups brown rice flour

1 cup soy flour

1/4 cup + 2 Tbsp cocoa powder

1/2 tsp xanthan gum

1/4 tsp baking powder

1/2 tsp salt

1 to 2 tsp ground ginger

3/4 cup olive oil

1 1/4 cup raw sugar

2 tsp vanilla extract

1/3 cup almond milk

(1) In a large bowl, mix together dry ingredients (flours through ginger). (2) In a separate bowl, vigorously mix oil, sugar, vanilla and almond milk until well combined. Add to dry ingredients and mix well. (3)Refrigerate dough for at least an hour. (4) Preheat oven to 350 degrees F, line a baking sheet with parchment, and dust a flat surface with flour or cocoa powder. (5) Separate dough into 3 portions. Return two to the fridge, and roll one out into a 1/4 inch thick sheet. Using a cookie cutter, cut shapes out of flat dough and place on baking sheet. Ball up and roll out dough, then cut again, until none remains. (6) When all dough has been cut (or a baking sheet is full) place in oven and bake for ~12 minutes, until firm. Let cool completely before eating.
