Happy St. Patrick’s Day!

Irish Cream Clovers with Green Vanilla Glaze (~1 dozen large cookies)

2 1/3 cups flour

2 Tbsp cornstarch

2 Tbsp cocoa powder

4 tsp espresso powder

1/4 tsp baking powder

1/4 tsp salt

1 cup earth balance, softened

1 1/2 cups sugar

1 tsp vanilla extract

1/4 tsp almond extract

1/4 cup irish whiskey

(1) In a medium bowl, mix together flour, cornstarch, cocoa, espresso, baking powder and salt. (2)In a separate bowl, cream together earth balance and sugar until light and fluffy (electric mixers are best for this). (3) Add vanilla, almond extract and whiskey and mix until well combined. (4) Stir in half the flour mixture until well incorporated. Add remaining dry ingredients and mix well. (5) Refrigerate the dough, wrapped in plastic, for about 30 minutes.

(6) Preheat oven to 350 degrees F. (6) Take about 1/3 of the dough, form it into a disk and roll out to about 1/6 inch thick. Cut dough with a cookie cutter and place each cutout on a parchment lined baking sheet. Repeat until no dough remains. (7) Bake for about 10-12 minutes, until edges start to darken. Let cool completely.

(8) In a medium bowl, mix together 3 Tbsp shortening or earth balance, 1/4 cup soy milk, 2 tsp vanilla, 1/2 tsp green food coloring and 2 cups powdered sugar until well mixed. Spread onto completely cooled cookies as desired.
