So…I actually made these cookies a couple weeks ago, and have just been lazy about this blogging thing. But seeing as I went through all the trouble of ordering vegan chocolate chips online (why does not even Whole Foods have them? it’s not like they’re that much different than regular white chocolate…), I thought I should make sure to show off the fruits of the deliveryman’s labor…

Peanut White Chocolate Chip Cookies (3 dozen)

1/2 cup smooth natural peanut butter, softened

1/4 cup nonhydrogenated margarine

2 Tbsp canola oil

1/2 cup sugar

1 cup packed brown sugar

2 Tbsp corn starch

2 Tbsp maple syrup

1/3 cup soy milk

2 tsp vanilla extract

2 1/4 cup flour

1 tsp baking soda

1/2 tsp salt

1 cup white chocolate chips

3/4 cup chopped roasted peanuts

(1) Preheat oven to 375 degrees F and line a baking sheet with parchment. (2) In a large bowl, beat together peanutbutter, margarine, oil, and sugars until well combined and smooth. (3) Thoroughly mix in corn starch, maple syrup, soy milk and vanilla. (4) In a separate bowl, stir together flour, baking soda, and salt. Add dry ingredients to wet and mix well. (5) Fold in white chocolate chips and peanuts. (6) Drop by walnut-sized balls of dough onto the baking sheet. Flatten each ball slightly, then bake for ~10 minutes, until edges start to become golden.
